Beet root salad with avocado and feta cheese


3 boiled beet roots

1 tsp lemon rind

2 tbsp lemon juice

Salt and pepper to taste

1 small white onion thinly sliced

2 tbs olive oil

4 cups rocket leaves

1 avocado, sliced

1/4 cup feta cheese crumbled

A handful of raisins for sprinkling

Combine lemon rind, juice, salt and pepper and shallot in a small bowl and whisk. Gradually add the oil while continuously whisking. Place rocket leaves in a bowl and toss with lemon juice. Add the beets and toss. Top with avocado and cheese and pour the dressing and mix well. Sprinkle raisins
